Il piatto principe è il Cous-Cous nella sua versione principale alla Trapanese ma offerto anche in altre interpretazioni, anche stagionali. Nei primi la Busiata è regina, anche in questo caso offerta sia alla Trapanese che in altre imperdibili versioni. A completare il menù antipasti e secondi piatti principalmente di pesce ma non solo.
