We try to choose only the best, what is true, rare and ethical. What is good for the body, eyes, palate and spirit. We live on Earth and we look around to propose exactly what we would like to eat. We put all our attention into the food we serve. We choose the most unobtainable and work with those who are able to provide us with products that are at least astonishing. Cooking follows the same philosophy, love for an excellent raw material, and absolute respect for flavors. Whatever the world has better to offer we want it. Here we come for an unmistakable passion: wine. But not for the wine of the technicians, not for the wine of the industries, let alone for that of the multinationals. Not for wines with high scores, nor for those made at a table. Wine comes with a capital "V", the same letter found in the Revolution and Truth.
