La pinsa è’ una specialità di origine romana che si contraddistingue per la sua leggerezza ,digeribilità e fragranza .La parola pinsa deriva dal latino “pinsère” che significa allungare, quindi l'atto di schiacciare e pestare.Secondo la ricetta originale, la pinsa romana era una schiacciata dalla forma allungata a base di acqua e cereali misti (orzo, farro, miglio).
