The "cazzata salentina" is a flat bread made of coarse grain wheat and baked in a wood-fired oven. Historically, the "cazzata" was used to test the oven temperature prior to baking the bread. Ever since, it has nourished and restored Salento farmers during their long days of work in the fields.
