L’altro Tramezzino è un’iniziativa nata dall’idea di portare a Milano un’usanza, una tradizione veneziana che è quella del cicheto. A Venezia e dintorni infatti, da metà mattina fino all’ora di cena, si possono consumare piccoli spuntini accompagnati da un bicchiere di vino o da un’altra bevanda, in locali storicamente chiamati bacari. Uno “street food” d’epoca. I piatti che vengono preparati più comunemente sono il baccalà mantecato, le sarde in saor, i nervetti, le uova con acciughe. Più recentemente si è diffuso l’uso del tramezzino tuttavia con caratteristiche tutte veneziane. Fin dagli anni cinquanta infatti un gruppo di panificatori locali ha messo a punto una ricetta di pane particolarmente morbido adatta a contenere diversi tipi di farcitura. Quest’ultima è particolarmente ricca ed abbondante, tanto da dare al tramezzino una forma unica.
